Madeira cake a rich cake made by the creaming method, flavoured with lemon zest, and decorated with a thin slice of candied citron; some recipes are similar to pound cake. Jane Grigson (1974) remarks:

This cake was served with Madeira and other sweet wines in the nineteenth century, hence the name. Although it is now a popular cake at tea time, to enjoy it at its best serve it with Madeira in the old style.
