The suribachi and surikogi are Japan’s answer to the stone and olive-wood mortars and pestles (respectively) that you’ll find in other parts of the world. Made of ceramic with fine grooves running throughout the suribachi, these things are ideal for pounding garlic to an even paste, crushing spices, and smashing herbs. We use ours every day to make infused oils, marinades, and sauces.
