These beans are popular in Hong Kong and can be found in great abundance in the markets there. They are also known as yard-long beans and can grow to three feet (1 m) in length. They are not related to green beans, the long beans having originated in Asia. Buy beans that are fresh and bright green, with no dark marks. There are two varieties: the light pale green ones and the dark green and thinner ones. You will usually find these beans sold in looped bunches; there is no need to string them. In Hong Kong, they are stir-fried with meats or with fermented bean curd. They have a crunchy texture like French or runner beans but cook faster. You will find them in some supermarkets and in many Chinese shops. Store the fresh beans in a plastic bag in the refrigerator and use within four days.
