This is the preferred oil used in Hong Kong cookery because it has a pleasant, mild taste that is unobtrusive. Its ability to be heated to a high temperature without burning makes it perfect for stir-frying and deep-frying. The peanut oils found in Hong Kong are cold-pressed and have the fragrance of freshly roasted peanuts. Some Chinese shops stock the Hong Kong brands, their names written just in Chinese characters; they are well worth the search.
