Shallots are mild-flavoured members of the onion family. They are small, about the size of pickling onions, with copper-red skins, and a distinctive onion taste that is not so strong as that of ordinary onions. The Western ones are an excellent substitute for Chinese shallots, which can sometimes be found in Chinese shops. In Hong Kong, you will find them fresh and pickled, to be served with preserved eggs as a snack. Shallots are expensive but a few go a long way. They are readily available. Keep them in a cool, dry place (not the refrigerator) and peel them as you would an onion.
