The most useful piece of equipment is the wok. It allows you to stir-fry, while quickly moving the food without spilling all over the place. You will find the wok useful for cooking bulky vegetables such as spinach or large quantities of any food, whatever the cuisine. When used for deep-frying, the wok saves cooking oil because the base is smaller, requiring less oil, but delivers depth, which is important. Another advantage is that the shape of the wok allows the heat to spread evenly over its surface, thus facilitating the rapid cooking that is fundamental to stir-frying.
