Herb-Scented Honey

I find that clear liquid honey works best and absorbs the scent from the herb more readily than set honey. Liquid honey can be turned into set honey by chilling, and, of course, set honey can be liquified by leaving the jar in a warm place or in the sun for a few days.
To make rosemary-scented honey, slightly warm a 1 lb jar of clear honey by leaving the jar in a warm place for 24 hours. Add 4 sprigs of rosemary (preferably flowering) to the honey, screw on the cap tightly, and leave in a warm room for 1–2 weeks. Now and again, turn the jar over to distribute the scent evenly. I usually leave the herb in the jar since it looks attractive.
