Drying the Pasta

Lay the pasta sheets on clean tea towels to dry naturally. Long pastas, such as fettucine and linguine, should be cut into 20cm lengths and then wound around closed outstretched fingers; place these ‘nests’ on clean tea towels to dry. This will probably take 6-8 hours, depending on the humidity - the pasta is ready when it feels hard. Transfer the dried pasta to an airtight container; it should keep well for several months.
