Dried porcini must be reconstituted in water before using (cold water is preferable but warm water may be used if time is short); the soaking liquid then becomes a vehicle for adding yet more flavor to the dish.
Soak the mushrooms in cold water to cover until soft, 30 minutes to 1 hour (or about 30 minutes in warm water).
Lift the mushrooms out of the soaking liquid and gently squeeze out as much of the water as possible; squeeze over the bowl so that the water returns to the soaking liquid. Rinse to remove any remaining grit.
