This is one of the recipes of Mrs. Raffald, the famous Manchester cook and caterer of Old Exchange Alley and the Officers‘ Mess at the Bull‘s Head. She was a Yorkshire woman, Doncaster born, and at the time of her marriage (about 1760) housekeeper to Lady Elizabeth War-burton at Arley Hall, Cheshire. Her cookery book was considered an indispensable wedding present, and it is still valuable as representing the best English cookery of the second half of the eighteenth century. Several of her recipes, suitable for modern tables, are included in this book. Dishes made from them were exhibited at the first English Folk Cookery Exhibition held in January, 1931.
