Buying Choose bananas based on when you want to eat them: those with green coloration will need a few days to ripen, whereas yellow bananas with brown flecks should be eaten within a day or two.

Storing Let ripen at cool room temperature. Ripe bananas can be stored in the refrigerator, but the skins will blacken.

Quick tip To hasten the ripening of a banana, place it in a paper bag with an apple.
