Buying Buy packaged seeds, or buy in bulk from a store that has a good product turnover. If possible, smell seeds before buying them to make sure they don’t have a rancid aroma.

Storing Refrigerate in an airtight container for up to 6 months, or freeze for up to 1 year.

Prep tip The next time you carve a pumpkin for Halloween, reserve the seeds for a healthy snack: Rinse and pat dry, sprinkle with salt, and toast in a dry frying pan over medium heat, stirring often, until the seeds are golden, 3–5 minutes.
