Buying If buying fresh edamame, look for bright green, plump pods. Choose organic, non-genetically modified beans when possible. Buy firm or extra-firm tofu for cooking.
Storing Refrigerate fresh edamame for up to 3 days; frozen will keep for a few months. Uncooked tofu will not keep long in the refrigerator.
Quick tip Precooked, marinated tofu is widely available, and can be eaten cold in salads and sandwiches.
