To make coconut milk (second extract)

Add about 310 ml (10¾ fl oz/1¼ cups) water to the squeezed coconut scrapings and repeat the above process until you have about 375 ml (13 fl oz/1½ cups) of thin coconut milk. Strain through a fine sieve.
