Units The original recipes were all in Imperial pounds, ounces and pints (an Imperial pint being 20 fl oz, rather than the US 16 fl oz – blame the 1834 Weights and Measures Act). We have given metric and American cup equivalents. However, our advice would always be to buy some digital scales (which measure in both Imperial and metric measures) and not to use cups, which are very imprecise. Equally, we’d advise purchasing a digital probe thermometer for testing pies and meats. We promise that you’ll never look back.
