Where wine is needed, the Braybrookes would have used European wines, such as claret (red) and hock (white). Go for a medium-dry, fairly fruity red (Bordeaux or Côtes du Rhône style) or a light, fruity and medium white (Riesling style). Do not go near wines labelled as ‘gutsy’ or ‘full-bodied’. Malbec or oak-aged wines should be avoided.
