Alternatives Some of the ingredients are expensive โ€“ this is Victorian upper-class cookery, after all. However, you can swap a cheap fortified wine (such as port, sherry, vermouth or ginger wine) for almost all of the alcohol, or use unbranded versions. Quailsโ€™ eggs are available pickled. Truffles are optional, and may be substituted with porcini mushrooms (for flavour) or pickled walnuts (for looks).
