Alternatives Some of the ingredients are expensive – this is Victorian upper-class cookery, after all. However, you can swap a cheap fortified wine (such as port, sherry, vermouth or ginger wine) for almost all of the alcohol, or use unbranded versions. Quails’ eggs are available pickled. Truffles are optional, and may be substituted with porcini mushrooms (for flavour) or pickled walnuts (for looks).
