Defrosting food safely is very important, but it doesn’t have to be complicated. As a rule I always defrost meals in the fridge overnight. It’s the safest way to defrost cooked food especially if it contains meat. Place the freezer bag or container in a bowl to catch any excess moisture that comes off.

With small batches of sauces like my Everyday Tomato Sauce and No-Cook Pestos, I sometimes defrost at room temperature or by gently heating in a saucepan if I am in a rush.

I rarely defrost large batches of food in the microwave as the result can be a bit uneven, resulting in some food being overcooked and other parts still frozen. If you do want to use the microwave, do it in short bursts and stop to stir the food often.
