Normally made of heavy iron, the tempura deep-frying pan is two-handled, with a half-circle metal rack perched on the edge for draining. There are several sizes, ranging from those for two people to family-size fryers. A large wok or any deep frying pan can do the job just as well.
Tempura is mostly served on bamboo trays though there are also metal ones, made to the same shape. While not necessary, these trays do make lovely serving tools. When arranging the tempura, first place a piece of washi (Japanese paper) on the tray.
