Chilli Bean Sauce

This thick dark sauce or paste, which is made from soyabeans, chillies and other seasonings, is very hot and spicy. It is usually available in the UK in jars from Chinese or Asian grocers. Be sure to seal the jar tightly after use and store in the larder or refrigerator. Do not confuse it with chilli sauce, which is a hotter, redder, thinner liquid made without beans and used mainly as a dipping sauce for cooked dishes.
