Chinese broccoli or gai lan (Brassica oleracea capitata) does not taste like European broccoli (calabrese). It is very crunchy, slightly bitter and resembles Swiss chard in flavour. It has deep olive green leaves and sometimes has white flowers. Chinese broccoli is usually only available at Chinese grocers. If you can find it, look for firm stalks and leaves which look fresh and green. It is prepared in exactly the same way as broccoli, and should be stored in a plastic bag in the vegetable compartment of the fridge where it will keep for several days. If you cannot find Chinese broccoli, substitute ordinary broccoli instead.
