Chinese leaves (Brassica pekinensis) look rather like a large, tightly packed cos lettuce with firm, pale green, crinkled leaves. It is sometimes known as Chinese or Peking cabbage, and is widely available in greengrocers, supermarkets and Chinese grocers. It is a delicious crunchy vegetable with a mild but distinctive taste. If you cannot find it, use English white cabbage instead.
