Also known as yard-long beans. Chinese long beans (Vigna sesquipedalis) can grow to about 1 metre (3 feet) in length. Although runner beans and French beans can be substituted for the long beans, they are not related, the long beans having originated in Asia. Buy beans that are fresh and bright green, with no dark marks. You will usually find beans sold in looped bunches. Store the beans in a plastic bag in the fridge and use within four days.
