Korean red chile paste made of gochugaru (red chile flakes), sugar, glutinous rice, fermented soybeans, and salt, traditionally fermented together in earthenware pots for years. Order this online if you can’t find it locally: There’s really nothing you can use as a substitute. Store this and the doenjang in the refrigerator, and use them both within a year.
