Even though they have a pale, creamy flesh, the flavour of Jerusalem artichokes is far from neutral, and is in fact very distinctive – almost like chestnuts when raw, and more sweet and reminiscent of globe artichokes when cooked. They can cause noisy digestive repercussions in some, but they’re full of good fibre and are meant to be great for gut health.
