Buy fresh peas when they are in season. Frozen peas are blanched and frozen within hours of picking and they can have a higher vitamin content than some fresh peas, so do not dismiss them as second best. Buy fresh beans when in season, pod them and boil them. You can also buy frozen beans all year round and some stores stock broad beans ready peeled.

How to store Always put pre-frozen food into the freezer immediately and if you have a long journey to the supermarket take a cool bag to transport them in. Store fresh peas in the fridge and eat within three days.
