Sometimes called prawns, shrimp are sold whole, with heads and shells on, or headless and peeled. Tiger shrimp have striped shells and tend to be larger than other kinds. There are about 35 medium shrimp to a pound and 50 small shrimp to a pound. In general, the larger the shrimp, the more expensive they are. In North America, most shrimp is flash-frozen immediately after being caught. Shrimp should smell sweet; if there is any fishy or off smell, avoid them. To clean shrimp, peel off the shell, pull off the head, and rinse well. When cooked, shrimp turn bright pink.
