Hold the bottle at a 45 degree angle, pointing it away from your body. Put one hand over the cork and unscrew the wire cage with the other. Remove the cage carefully, keeping one thumb over it, so that if the cork starts to emerge, you can control it.
Ensure that your hand covers and holds the cork securely, so that it doesn’t shoot out. Twist the bottle (not the cork) slowly while holding the cork steady. If you twist the cork rather than the bottle, you risk the head of the cork breaking off in your hand.
Ease the cork out slowly, covering it with the palm of your hand. Just as it starts to come out, push the cork to slow it down. It should come out with a sigh rather than a loud pop. If it is stubborn, use a bar towel for extra grip on the bottle.
