PX There are a few sherries made from a variety of grapes called Pedro Ximénez. These are sun-dried grapes (essentially raisins) and the result is a very sweet treacly wine, almost black in colour, entirely different from classic sherry. Its principal use is as a blending wine for oloroso, amontillado and cream sherry.
