We rely heavily on the oven for one-dish dinners. Choose small 1.5-quart (1.5 L) casserole dishes with a lid for vegetables and whole grains; the 3-quart (3 L) versions are great for casseroles and full meals. A 9 by 13-inch (23 by 33 cm) baking dish is also useful for lasagna and layered dishes. We prefer ceramic or enameled cast iron to glass, but the choice is yours.
