Cinnamon is a classic spice that is used the world over. It loves everything from lamb and rice to chocolate and ice cream. I use ground and sticks in my recipes, but if you don’t have sticks in the cupboard, you can also substitute ½ teaspoon ground cinnamon for a 5cm/2in stick.
