Sherry vinegar is one of our favourite Spanish ingredients. A good, aged sherry vinegar has more of a distinctive character than other wine vinegars in that it has warmth and nuttiness from being aged in casks, and complexity from being blended in the same way that sherry is blended (i.e., in the solera system. The older the blend of sherry vinegar, the more concentrated and complex the flavour (we were once given a 120-year-old vinegar, which was quite extraordinary). When choosing a sherry vinegar, always try to buy one that has been aged, such as the ten-year-old Valdespino brand (see Suppliers).
