Overloading a small wok will make the ingredients soggy. Noodle dishes such as pad Thai need this type of space to succeed. Forget about buying a deep-fryer and use your wok instead. The unique shape uses far less oil and keeps the temperature consistent. Deep-frying can ruin certain saucepans, so it’s best to use your wok, which will also keep it well seasoned. Asian grocery stores are the best place to purchase one.
