Sübye is a mixture of rice and water used as a basis for milk desserts. The rice is soaked for 8 hours with double the quantity of water (75g to 150ml water); the mixture is then blended and sieved. A blend of ground rice, starch and milk can be used instead, but the dessert may set less well.
