Bouillon cubes give a strong burst of flavor to soups, sauces, broth, stews, and braised meats. They come in four flavors in Italy: chicken, beef, mushroom, and vegetable. Most Italian cubes have animal fats and MSG, although a few, such as the Generoso brand, do not. Try to find bouillon cubes without any additives, but if you cannot, taste carefully for salt because the cubes can be extremely salty. Even so, many grandmothers’ little trick of crumbling such a cube directly into many dishes gives an amazing boost to the flavor of sauces. Good homemade meat stock and chicken or vegetable broth are excellent substitutes.
