These glossy, yellow noodles are made of flour, eggs and water. They are considered ‘fresh’ although packaged ones with longer shelf lives are now easily found in the refrigerated section of supermarkets.

It goes without saying that these noodles are the main ingredient of Nonya Hokkien noodles, Hokkien mee soup and interestingly, also mee rebus! The first dish is a testament to the fact that many Peranakans are descended from Hokkien immigrants.

The noodles are actually parboiled but are cooked or boiled once again before serving. My mother always believed that noodles would get bloated and soggy, so she would often blanch the noodles just before serving.
