This jelly is from the devil’s tongue plant, which is part of the taro family. It is also known as konjac. The plant takes about 3 years to grow, reaching an optimum diameter of 30-cm (12-in). This devil’s tongue plant cannot be consumed raw and has to be processed before eating. The colour of devil’s tongue jelly is normally gray but you will find white and red ones as well. You can also find devil’s tongue jelly in noodle form. These are called shirataki. Unless it is stated on the packaging, most devil’s tongue jelly need to be blanched in boiling water before using. This ingredient contains zero calories but is full of fibre.
