A potato ricer produces perfect fluffy mashed potato without any lumps at all. A sieve does a pretty good job too, but you will have to push the potato through with a wooden spoon. Buy the largest potato ricer you can find, so you can process the potatoes more speedily.
Don’t be tempted to mash potatoes by puréeing them in a food processor, as they will become gluey. Sweet potatoes can be puréed successfully in this way, though.
