Wild rice works very well mixed with a brown rice, which has more of an organic 21st-century feel than the stark 1980’s black and white.
An attractive mix is 1 cup of white/brown rice to ⅓ cup wild rice. This mix will need just over 3 cups of water (2 for the white, 1 for the wild).
Keep the colours separate and start by boiling the wild rice in 480ml/16fl oz/2 cups water. I like to give it a 15-minute head start to avoid the needle-like quality it can have against softer grains.
Then add the white/brown grains and 250ml/9fl oz/generous 1 cup water, partially cover and simmer for 35 minutes or so until almost dry.
Cover tightly, remove from the heat and leave to stand for 20 minutes.
