I have not had good luck drying my own apricots but always have a jar of store-bought on hand. They are great chopped into a cabbage salad with spicy chili oil and a lot of cilantro. They tenderize in savory stews like a Moroccan-inspired lamb stew with chickpeas and tomato. They also pickle well using the Basic Fruit Pickle Brine to add an extra pop of sweet-sour to any salad or cheese plate.
