This name is Ligurian dialect for silk handkerchiefs. You will want to make your sfoglia using the recipe for Pasta Sfoglia alla Ligure. The sfoglia should be rolled as thin as possible. Then, using a knife or a straight-edged pasta wheel, cut the handkerchiefs into squares that are about 5 inches (12.5 cm) per side. A more detailed recipe for mandilli di sæa may be found.
