Vegetables are described in more detail in the chapter devoted to them. The key, as always, is freshness, ripeness, and careful handling. You should always want the best possible vegetables on your plate. If you planned to make a dish using a particular vegetable and there are only inferior examples available, opt instead to use a different one instead of producing a mediocre vegetable dish that will make you and your guests frown.
