Palm wine an alcoholic beverage made by fermenting the sap of the palm date, using the natural sugars and yeasts present in the sap. It is drunk throughout West Africa and Asia and is known as toddy in India and Sri Lanka. Cloudy in colour, it has a sweet, slightly musky flavour and is around 5% alcohol. It can be distilled further to create a strong spirit known as arak.
