Plantain a member of the banana family, they are traditionally larger in size and lower in sugar than bananas. They come in two varieties โ€“ either unripe (or green), or ripe. Both must be cooked before eating. Unripe plantains are starchy and almost bread-like in texture with a bland flavour. Ripe plantains with their black and yellow skin are stickier and sweeter.
