The oldest English cheese, probably being made when Britain was first visited by Caesar’s legions. Crumbly in texture and not as flaky as Cheddar, Cheshire cheese is very slightly salty in flavour and reddish gold in colour.

Companion wines: Beaujolais, ale, beer, cider.
