Calzone is really a pizza sandwich, and can be filled with any variety of fillings. Although they are usually cooked in an oven like pizza, they can also be fried. Armando Percuoco, who runs one of Sydney’s best Italian restaurants, Buon Ricordo, tells me that the fried calzone comes from Naples in Italy. The dough is rolled out, stuffed with cheese, one of which is mascarpone, and folded onto itself to form a half circle to seal. It is then fried in olive oil. Armando serves it with a beautiful tomato sauce. So simple, but so delicious!
