Use a shucker with a protection shield and always protect the hand holding the oyster with a thick cloth.
Scrub the oysters in cold water. Place an oyster, rounded-side-down, on a thick doubled cloth in the palm of your hand.
Insert an oyster knife through the pointed end of the oyster at the hinge where the top and bottom shells meet Work the knife in until at least 3 cm (1¼ inches) is inside. Twist the knife to separate the shells.
Slide the knife between the oyster and the top shell, cut through the hinge muscle and remove the top shell.
