lf using raw prawns, remove the dark intestinal vein, which is unpleasant to eat.
Peel off the shell, being careful to keep the flesh intact Leave the tail end intact if specified in the recipe.
Make a shallow cut along the back of the prawn with a small knife to expose the dark intestinal vein.
Remove the vein with the tip of a knife and discard. Rinse the prawns and pat dry with paper towels.
