Foods with sour notes can cut through monotonous textures or flavors, such as the cloying sweetness of many fruit jams, and add a little depth. Sour tastes leave a pleasant tingling sensation on the tongue. In Indian cuisine, limes are used more often than lemons for savory dishes because they are grown all over India and are easier to find in the markets. I prefer to pair limes with hot chiles in savory dishes because they tend to amplify the heat. Try this yourself: Taste a few red chili flakes with a few drops of fresh lime juice, and then with fresh lemon juice and see which combination is hotter.
