There are two types of cinnamon available in markets: Ceylon cinnamon (top right photo, left), which is also called ‘true cinnamon,’ and cassia cinnamon (top right photo, right). They both have a warm scent and are used in both savory and sweet preparations. Ceylon cinnamon is lighter in color and less potent than cassia.
